• Zest of 1 lemon (1-2 tsp)
• 4 cups (480g) powdered sugar
• 2–3 tbsp heavy whipping cream, chilled
• 1/2 cup (100g) granulated sugar
• 3 large egg yolks
• 1 tsp cornstarch
• 2 tbsp lemon zest (2 large lemons)
• 1/4 cup (60ml) fresh lemon juice (2–3 large lemons)
