Cherry Blossom Cupcakes

Ingredients

• 3 cups sifted cake flour (do not substitute with self-rising flour)?
• 4 teaspoons baking powder
• ½ teaspoon salt
• 2 sticks of unsalted butter at room temperature
• 2 cups sugar
• 4 large room temperature eggs, separated
• ½ teaspoon cream of tartar
• 1 cup cherry Greek yogurt
• ½ cup culinary coconut milk + 1 tablespoon
• 1 ½ teaspoons cherry extract
• 1 ½ cups cherry baking chips
• 1 (8-ounce) tub of whipped cream cheese
• 1 (5.3-ounce) carton of cherry Greek yogurt
• 3 tablespoons powdered cherry gelatin
• 6 tablespoons powdered sugar (more if you like very sweet frosting)
