Strata with Spinach and Shrimp

Ingredients

• 2 T. olive oil
• 2 cups cooked shrimp, thawed and chopped into chunks
• 1 cup chopped yellow onion
• 4 cups bread, cut into 1-inch chunks
• 1 1/2 cups milk
• 5 eggs, blended
• 1 garlic clove, peeled and minced
• 1 10 oz package frozen spinach, thawed and drained
• 1/4 cup grated Parmesan cheese
• 1/4 t. ground black pepper
• 1/8 t. ground nutmeg
