Ingredients
- ½ cup unsalted butter, softened
- Zest of 2 lemons
- 1 cup granulated sugar
- 3 large eggs
- 1 ⅓ cup Bob’s Red Mill Super-Fine Almond Flour
- 1 cup Tapioca Starch/Flour
- 2 tsp xanthan gum
- 1 tsp kosher salt
- 1 1/2 cups pistachios
- 2 tsp granulated sugar
- Zest of one lemon (after baking)
