Baked cod with a herb and mature Cheddar breadcrumb crust
Diana Henry’s recipe for a lovely fresh fillet of cod baked in a cheese and herb breadcrumb crust.
Ingredients
- 6 tbsp fresh white breadcrumbs
- 30g (1oz) mature Cheddar cheese, grated
- ½ tbsp finely chopped parsley leaves
- 1 tbsp olive oil
- About 15g (½oz) unsalted butter, melted, plus more for the dish
- Salt and pepper
- 2 cod fillets (preferably skinned) of about 175g (6oz) each
