Ingredients

• 1 loaf stale or day - old bread, sliced into 1” cubes
• 1 pound breakfast sausage , casings removed
• 1 tablespoon olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 2 cups mushrooms, sliced
• 2 cups spinach, roughly chopped
• 1 teaspoon thyme
• teaspoon rosemary
• 6 eggs
• ½ cup cream
• 1 cup s Gruyère cheese, shredded
• Salt
• Pepper
• Butter, for greasing
