POTATO PIZZA BOATS

Ingredients

• 4 large potatoes.
• 1/2 cup pure tomato puree (find one without additives);
• 1 tsp dried oregano;
• 1/2 tsp. dried thyme;
• 1 tsp raw honey;
• 1/4 tsp. water.
• 1/4 tsp. Zucchini, cut into cubes;
• 1/4 tsp. red pepper, cut into cubes;
• 1/4 tsp. cherry tomatoes, cut in half;
• 1/4 tsp. red onion, coarsely chopped;
• Fresh basil, to serve.
