POTATO PIZZA BOATS

Ingredients

• 4 large potatoes
• 1/2 cup pure tomato puree (find one without additives)
• 1 tsp dried oregano
• 1/2 tsp. dried thyme
• 1 tsp raw honey
• 1/4 tsp. water
• 1/4 tsp. Zucchini, cut into cubes
• 1/4 tsp. red pepper, cut into cubes
• 1/4 tsp. cherry tomatoes, cut in half
• 1/4 tsp. red onion, coarsely chopped
• Fresh basil, to serve
