• 2 pounds Strip loin, trimmed
• Olive oil As needed

• For Provolone sauce:
• 1 tablespoon Unsalted butter
• 1 tablespoon Flour
• 2 cups Whole milk, heated
• 1 cup Aged provolone
• 1 cup Parmesan reggiano
• 1 teaspoon Kosher salt
• ¼ teaspoon Black pepper
• For Sautéed Onions, Peppers and Mushrooms:
• 2 tablespoons Olive oil
• 1 ½ pound Mushrooms, coarsely chopped
• 3 tablespoons Parsley, finely chopped
• 3 large Yellow onions, finely chopped
• 2 whole Poblano peppers, thinly sliced
• 2 whole Green bell peppers, thinly sliced
