- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp white pepper
- 10-12 sprigs fresh thyme (leaves only or 1 tb of dried thyme)
- 2 bay leaves
- 1 cup white wine
- 1 cup chicken stock
- juice of 1/2 lemon
- 2 tbsp all-purpose flour
- 1/4 cup water
- 1/2 cup heavy cream or crème fraîche
- kosher salt (to taste)
- 1 recipe Spaetzle
