Ingredients

  • 2 lbs white veal (1" cubes)
  • 1 small Spanish onion
  • 3-4 small carrots (peeled and cut into 1" inch lengths)
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp white pepper
  • 10-12 sprigs fresh thyme (leaves only or 1 tb of dried thyme)
  • 2 bay leaves
  • 1 cup white wine
  • 1 cup chicken stock
  • juice of 1/2 lemon
  • 2 tbsp all-purpose flour
  • 1/4 cup water
  • 1/2 cup heavy cream or crème fraîche
  • kosher salt (to taste)
  • 1 recipe Spaetzle
  • 1 recipe green salad
