Salt Lick Bbq Potato Salad Recipe

Ingredients

• 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
• 1 cup Mayonnaise
• 1/4 cup Yellow mustard
• 3 tbsp Apple cider vinegar
• 2 tbsp Honey
• 1 tbsp Smoked paprika
• 1 tsp Salt
• 1/2 tsp Freshly ground black pepper
• 4 hard-boiled eggs, chopped
• 1/2 cup finely diced celery
• 1/4 cup finely chopped red onion
• 1/2 cup chopped crispy bacon (optional but highly recommended)
• 2 tbsp chopped fresh parsley for freshness
