• 1 TBLS vegetable oil
• 1 lb. lean ground beef
• 1 small onion
• 3 cloves of garlic (minced)
• 2 large carrots
• ½ cup sliced mushrooms
• 3 TBLS all-purpose flour
• 1 TBLS Worcestershire
• 2 TBLS tomato paste
• 1 TBLS Silver Spring Stone Ground Mustard
• ¼ cup red table wine
• 1 cup beef broth
• 1 tsp fresh thyme (or ¼ teaspoon dried thyme)
• 1 tsp fresh rosemary (or ¼ teaspoon dried rosemary)
• ½ cup frozen peas
• ½ cup frozen corn
• Salt and pepper to taste
• 2 ½ pounds Yukon gold or russet potatoes
• 4 TBLS butter
• ½ cup sour cream
• ½ cup milk
• 1 TBLS Silver Spring Prepared Horseradish
• ½ cup shredded aged white cheddar
• Chives (optional garnish)
