Maitake Mushroom Soup - Miz En Place

Ingredients

• 4 ounces Maitake mushrooms ((hen of the woods), chopped)
• 8 ounces assorted mushrooms
• 3 tbsp olive oil
• 3 shallots (chopped)
• 1 leek (chopped)
• 1 onion (peeled and diced)
• 1 potato (peeled and chopped)
• 2 tbsp tamari
• 1 tbsp cognac (optional)
• 1 bay leaf
• 2 tbsp chopped fresh thyme
• 1 tsp chopped fresh rosemary
• salt (to taste)
• fresh ground black pepper (to taste)
