- 2 red onions, chopped

- small red chilli, chopped
- glass of red or white wine
- 200ml chicken stock
- rind and juice of a small lemon
- 2 tablespoons crème fraiche
- sea salt and black pepper
- handful basil leaves, chopped
- grated parmesan
