Ingredients

  • 2 tbsp chopped coriander/cilantro leaves
  • 115 g/4 oz/heaped ¾ cup skinless peanuts, chopped
  • 1 small green chilli, deseeded and chopped
  • 1 tsp caster/granulated sugar
  • 1½ tsp salt
  • 1 cm/½ in piece of fresh root ginger, peeled and grated
  • 115 g/4 oz/⅔ cup basmati or other long-grain white rice, rinsed and drained (or use 225 g/8 oz/1⅔ cups cooked rice)
  • 1 garlic clove, crushed
  • 1 lime, cut into 4 wedges, and chilli dipping sauce
  • rapeseed/canola or sunflower oil, for deepfrying
  • juice of ½ lime
  • 2 tsp light soy sauce
  • ½ tsp ground coriander
