• 1-1/2 medium yellow onions, finely chopped
• 1/2 cup berbere spice blend, or to taste
• 1 tbsp puréed fresh, peeled ginger
• 2 tsp puréed fresh garlic
• 1 cup dried red lentils, washed
• 3 cups water + more if needed
• 1/2 tsp fine sea salt, or to taste
