Ingredients

  • 300g flour (2 cups)
  • 3/4 cups boiling water
  • 2/3 tsp salt
  • 5 cups strained Taiwanese cabbage (1/2 a large head)
  • 1/2 pound pork belly, skin off (ground or very finely chopped)
  • 1/2 pound ground pork
  • 1 cup packed shiitake mushrooms (chopped)
  • 1 tablespoon + 1/2 tsp kosher salt, divided
  • 1 teaspoon sesame oil
  • 1 tablespoon minced fresh garlic (about 3 medium cloves)
  • 2 teaspoons zested fresh ginger
  • 4 teaspoons brown sugar
  • 3 corn on the cobs
  • 4 shiitake mushrooms
  • 1 sweet onion (chopped)
  • 2 tbsp olive oil
  • 1/2 tbsp of butter
  • Salt and pepper to taste
  • Scallions
  • Fennel fronds
  • Black sesame seeds
  • Green scallion oil
