Recipe: Linzer Cake

Ingredients

• 250 g butter / 9 oz
• 250 g flour / 9 oz
• 125 g icing sugar / 4 oz
• 150 g ground hazelnuts (or almonds) / 5 oz
• 2 tbsp breadcrumbs
• 1 egg
• 1 egg yolk
• lots of ground cinnamon
• a pinch of ground cloves
• a pinch of salt
• Grated lemon zeste or lemon juice
• Wafers for layering, to taste
• egg for coating
• redcurrant jam for coating
• butter for the mould
• flaked almonds, to taste
