• 125 g cold butter (diced)
• 250 g plain flour
• 1 egg
• ½ tsp salt
• 200 g smoked streaky bacon (cut into 1cm strips (optional))
• 12 asparagus spears (trimmed)
• 70 g gruyère cheese (grated)
• 4 large eggs
• 150 ml double cream
• 2 sprigs thyme (leaves picked)
• 2 shallots (sliced)
• A pinch ground nutmeg
• A knob of butter
