Ingredients

• 1/2 cup (125 ml) semi-salted butter
• Grated zest of 1 lemon
• Flesh of 1 lemon, pith removed, finely diced
• Juice of 1 lemon
• 1 tablespoon (15 ml) chopped flat-leaf parsley
• 2 teaspoons (10 ml) chopped capers
• Freshly ground pepper
• 1/2 cup (125 ml) semi-salted butter, softened
• 2 tablespoons (30 ml) sushi pickled ginger (gari), drained and chopped
• Grated zest of 1 lime
• Juice of 1 lime
• 2 shallots, chopped
• 2 tablespoons (30 ml) white wine vinegar
• 1/4 cup (60 ml) white wine
• 2 teaspoons (10 ml) chopped fresh tarragon
• 1/4 cup (60 ml) lemon or lime juice (or to taste)
