  • 1 teaspoon freshly ground black pepper, divided, plus more to taste
  • ¼ cup all-purpose flour (for dredging)
  • 2 tablespoons neutral oil (like canola, vegetable, or grapeseed)
  • 2 large yellow onions, chopped (about 3 cups)
  • 4-6 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups low-sodium beef broth, plus a splash for deglazing
  • 1 tablespoon Worcestershire sauce
  • 3 large carrots, peeled and cut into 1-inch pieces
  • 1 medium turnip, peeled and cut into 1-inch pieces (see notes for rutabaga or parsnip substitution)
  • 2 lbs Yukon Gold potatoes, peeled and cut into 1 ½ - 2 inch chunks
  • 2 bay leaves
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

  • 1 cup frozen peas
  • 8 oz cremini mushrooms, quartered and sautéed separately before adding
