Ingredients

• 4 New York strip, shell or sirloin tip steaks, with all fat removed
• 3/4 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
• 2 tablespoons virgin olive oil
• 2 shallots, peeled and finely chopped
• 4 large mushrooms, cut into thin strips
• 2 large cloves garlic, peeled, crushed, and finely chopped
• 1 cup red wine

• 1 tablespoon Dijon mustard
• 1/2 teaspoon potato starch, dissolved in
• 2 teaspoons water
• 1 tablespoon finely chopped chives
