Ingredients
- Serves 3-4
- 4 Large Peppers (I try for 2 yellow, 2 red - anything but green)
- 1 Large onion or two small onions
- 2 Cloves of Garlic
- 1 litre of vegetable stock
- 5 tbsp of natural yoghurt (or half a tub of single cream, but I prefer yoghurt)
- Olive oil
- Salt and pepper
