• 1 tsp kosher salt, divided
• 1/2 tsp freshly ground black pepper
• 1 large orange, peeled and segmented
• 1 medium red beet, peeled and thinly sliced (about 4 oz)
• 1/2 small red onion, thinly sliced
• 2 cups baby arugula
• 2 tbsp red wine vinegar
• 1 tsp honey
• 1/2 cup cooked farro (about 2 oz dry)
• Fresh dill fronds, for garnish (optional)
