Ingredients

• 8 Roma tomatoes, halved and cored
• 1 small white onion, peeled and quartered
• 2 garlic cloves, peeled
• Kosher salt, to taste
• 8 Hatch chiles
• 1 cup refried beans
• 8 oz Oaxaca cheese, thinly sliced
• 5 Gelson’s eggs
• 2 cups Gelson’s all-purpose flour
• 1 tsp kosher salt
• 4 cups vegetable oil
• Cotija cheese, crumbled, for garnish
• Chopped cilantro, for garnish
