Carrot Cake- Persian Inspired recipe by Mrs Ally

Ingredients

• 2 cups brown sugar
• 1 cup oil
• 4 eggs
• ¾ cup mashed pumpkin/banana/pineapple (I used pumpkin here and it goes unnoticed. Grated pineapple is really delicious also!)
• 2 cups grated carrots (4 large)
• 2 and ½ cups flour
• 2 teaspoons baking powder
• 1 teaspoon bicarbonate of soda
• ¼ teaspoon salt
