Crispy Chicken with Honey Sauce

- 2 eggs, beaten
- ½ cup bread crumbs
- ½ cup of oat flakes
- 2 shallots, finely chopped
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh tarragon
- 4 (approximately 6 ounces) boneless and skinless chicken breasts
- Sea salt and freshly ground black pepper
- 1/3 cup vegetable oil
- ½ cup honey
- ½ cup cider vinegar
- ½ cup brown sugar
- 3 tablespoons Dijon mustard
- ½ cup whiskey (optional)
