- Rice Flour
- Salt
- Turmeric Powder
- Ground Cumin
- Ground Coriander Seed
- Thai pepper powder
- Juice from fresh lime
- Vegetable Oil for frying
- Ground Thai Chile Powder (more or less to suit your taste)
- Tamarind Concentrate mixed with 6 tablespoons lukewarm water
- Shallots, finely pounded in mortar and pestle
- Cloves garlic, finely pounded in mortar and pestle
