Ingredients

• 454g (1lb) Extra Lean Noble Premium Bison
• 300-500g caul fat*
• 1 onion (approximately 3/4 cup), finely minced
• 4-5 cloves garlic, finely minced
• 1/4 cup (59ml) fresh parsley, finely minced
• 1 egg
• 1/4 cup (59ml) seasoned breadcrumbs
• 1 tsp (5ml) Worcestershire sauce
• 1/4 cup (59ml) whiskey
• 1 tbsp (15ml) melted butter
• 1 tbsp (15ml) maple syrup
• 1/2 tsp (2.5ml) red chiles
• 1/2 tsp (2.5ml) dried oregano
• 1 tsp (5ml) smoked paprika
• 1 tsp (5ml) fennel seeds
• 1 tsp (5ml) dry mustard
• Salt and pepper to taste
