Smoked Salmon & Sweet Potato Hash with Baked Eggs Recipe - Mann Orchards

Ingredients

• 3-4 tbs vegetable oil
• 1 sweet potato peeled and cut into ½” dice (about 1 lb)
• 2 Yukon Gold potatoes (1 lb), cut ½” dice (unpeeled)
• 1 medium red onion, chopped
• ½ red pepper, diced
• 1 cup corn
• 4 oz smoked salmon, flaked (if you’re using pre-sliced then cut into dice)
• 1 bunch scallions, chopped small
• 1 tsp Kosher salt
• 1 tsp black pepper
• 6 eggs
• 3 tbs melted butter
