gingerbread sandwich cookies - hot for food

Ingredients

• 3 C all-purpose flour
• 3 tsp ground ginger
• 2 tsp cinnamon
• 1 tsp ground cloves
• 1 tsp baking soda
• 1/4 tsp sea salt
• 1 C packed brown sugar
• 1/4 C coconut oil, melted
• 1/2 C nondairy milk
• 1/4 C unsulphured molasses
• 1 tsp vanilla extract
• 1/3 C granulated sugar, for rolling cookies
• 3 C powdered sugar
• 3 tbsp coconut oil, softened but solid at room temperature
• 2 tbsp nondairy milk
• 1 vanilla bean
