Gaz Oakley kale and apple salad | The English Garden

Ingredients

• 70g raw shelled peanuts
• 1 tbsp peanut oil
• 4 tbsp maple syrup
• 1 tbsp smooth peanut butter
• 2 tsp miso paste
• 4 tbsp sauerkraut or kimchi brine, or rice wine vinegar
• 4 spring onions, finely chopped
• 1 red chilli, finely chopped
• 1 garlic clove, minced
• Pinch of sea salt
• 200g curly kale
• 2 apples, such as red Braeburns, cored and finely sliced
• Handful of Thai basil, or an aromatic herb like coriander
