  • 1 tablespoon unsulphured molasses
  • 2 teaspoons active dry yeast
  • 1¾ cups bread flour
  • ¾ cup plus 2 tablespoons rye flour
  • ¾ cup plus 2 tablespoons whole wheat pastry flour
  • 2 teaspoons kosher salt
  • 1 cup room-temperature porter beer
  • 1 tablespoon walnut oil (or olive oil, plus extra to coat bowl)
  • 1 –2 tablespoons aniseed (to taste, lightly crushed)
  • 1¼ cups lightly toasted walnuts*
