Ingredients

• 5 scallions, chopped
• 1/4 cups parsley, fresh, chopped
• 1 Tbsp thyme, fresh, chopped
• 4 cloves garlic, minced, divided
• 1 lime, zested
• 1 lb turkey breast, ground
• 1/4 tsp salt
• 1/4 tsp pepper
• 1 Tbsp olive oil
• 1 lemon, zested (for 2 teaspoons of zest) reserve the juice
• 1 bunch celery, chopped (for 1/2 cup)
• 3 carrots, peeled and chopped (for 1 cup)
• 1 tsp cumin, ground
• 4 cups chicken broth, low-sodium
• 1 Tbsp coconut aminos
• 3 cups kale, chopped
