- 1/4 Cup Unsweetened Applesauce
- 1 Tsp Vanilla Extract
- 1 Tsp Baking Powder
- 1/2 Cup Monkfruit Sweetener
- 1 Cup Flour
- 1 Tsp Cinnamon
- Pinch Salt
- Mix In:1 CupShredded Carrots (packed)
- Topping:1/4 CupUnsweetened Shredded Coconut
