Greek Inspired Filo Chicken Pie
A Greek inspired crispy chicken filo pie. It's kind of like a cross between spanakopita and chicken pot pie.
Ingredients
- 1 leek, thinly sliced
- 4 garlic cloves, minced
- 3 spring onions, sliced
- 600g chicken thighs, boneless and skinless
- 200g baby spinach, washed and chopped
- 100g cavolo nero, washed and chopped
- 1 lemon, juice
- 20g dill, roughly chopped
- 50g feta, crumbled
- 40g unsalted butter, plus extra for brushing
- 40g plain flour
- 400ml chicken stock
- Salt, to taste
- 6 filo sheets
- Olive oil
