Ingredients

  • 1 lb (450g) spaghetti or linguine.
  • 1 jar (24 oz) high-quality marinara sauce + 2 cups chicken or vegetable broth.
  • 3 cloves garlic (minced)
  • ½ red onion (finely diced)
  • 1 tsp crushed red pepper flakes (optional, for the "zest")
  • 1 cup cherry tomatoes (halved)
  • ¼ cup fresh basil leaves
  • Parmesan cheese.
  • Sauté: In your large stainless steel stockpot, heat 1 tbsp olive oil over medium heat. Sauté the onions and garlic for 2–3 minutes until fragrant.
  • Combine: Pour in the marinara sauce, broth, and red pepper flakes. Bring the liquid to a rolling boil.
  • Cook Pasta: Add the dry pasta directly into the pot. Submerge it as it softens. Reduce heat to a simmer and cover with the lid.
  • Emulsify: Cook for 10–12 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. The liquid will reduce into a thick sauce.
  • Fold: Once the pasta is al dente, stir in the halved cherry tomatoes and fresh basil.
  • Serve: Plate directly from the pot and top with a generous dusting of Parmesan.
