Chicken Poblano Cornbread Casserole | Wolfe Quilting

Ingredients

• 2 Tbs butter
• 2-3 poblano peppers seeded and chopped
• 1 onion, chopped
• 2 Tbs flour
• 1 tsp ground cumin
• 1 tsp paprika (smoked if you have it)
• 2/3 cup milk
• 8 oz pkg cream cheese, cubed
• 1 small rotisserie chicken, deboned and chopped
• 2 cups shredded pepper jack cheese (or whatever you have on hand)
• 2 – 4oz cans diced green chilis (depending on your spice-level)
• 1 or 2 packages (8.5 oz box) of cornbread/muffin mix
