Mom's Chili Ketchup

Ingredients

• 18 tomatoes Ripe
• 2 28-oz cans Plum tomatoes
• OR EQUIVALENT AMOUNT
• 2 medium Onions sweet diced
• 2 tablespoons Salt
• 2 tablespoons Ginger
• 1 teaspoon Chili powder mild
• 2 tablespoons Cinnamon
• 2 tablespoons Allspice
• 1 dash Chili seeds
• 1 dash Tobassco
• 4 Red pepper sweet
• 1 1/2 cups brown sugar adjust (up to 2 cups), (or to taste)
• 1 cup vinegar plain
• Wine or cidar is fine
