Ingredients

• One 20-oz can young green jackfruit in brine
• 1 16-oz can of black beans
• ½ yellow onion, sliced
• 2 tbsp oil
• 1 tsp cumin
• 1 tsp coriander
• ½ tsp salt
• 8 corn tortillas
• 1 cup sour cream or sour cream substitute
• 1 cup tomatillo salsa
• 1 bunch cilantro, chopped (approx. 1 cup)
• 2 cups shredded mozzarella or cheese substitute
