Ingredients

• 400 g sweet potatoes, peeled and cut into 2cm/1in cubes
• 400 carrot, cut into 2cm/1in cubes
• 1 tbsp olive oil
• 1 courgette, thickly sliced
• 1 red onion, cut into 8 wedges
• 1/2 red chilli, Deseeded and chopped
• 3 garlic cloves
• 680 g chicken breast
• 1 lemon, quartered
• 2 tsp ras-el-hanout spice mix
• 1 sprig thyme
• 1 small bunch coriander, finely chopped
• 1 tsp black pepper, only a pinch
• 40 g natural yoghurt, to serve
