Shakshuka (Middle East Version)

Ingredients

• 1 tablespoon olive oil
• 1 finely chopped onion
• 2 cloves garlic (minced)
• 1 red bell pepper (chopped)
• 2 long green chilies (chopped)
• 2 tablespoons concentrated tomato paste
• 1 teaspoon sweet paprika
• 1 teaspoon smoked paprika
• 1 teaspoon ground cumin
• 1 can (425 g diced or crushed tomatoes)
• 1/2 teaspoon brown sugar
• 1/2 lb 500 grams kale, stalks removed and sliced
• 6 large eggs
• A few sprigs of fresh parsley
• Crusty bread (for serving)
