Peppered NZ Pork Curry | NZ Woman's Weekly Food
This peppered pork curry can be thrown in the slow-cooker before you head to work and you'll have a yummy dinner ready to eat once home
Ingredients
- 1.2kg diced boneless NZ Pork shoulder
- 1 medium red onion, thinly sliced
- 4 cloves garlic, crushed
- 4 tsp finely grated fresh ginger
- 2 tbsp brown sugar
- 2 tsp cracked black pepper
- 1 cinnamon stick
- 2 tsp ground cumin
- 1 tsp ground fenugreek
- ½ tsp ground cardamom
- 1 cup (250ml) chicken stock
- 400g canned diced tomatoes
- 1 cup (28g) Greek-style yoghurt, plus extra to serve
- 150g baby spinach leaves
- 1/3 cup loosely packed fresh coriander leaves, to serve
