Sweet corn fritters with pineapple chilli salsa - 9Kitchen

Ingredients

• 3 cups sweet corn kernels
• 1 spring onion, finely chopped
• 3 whole eggs or 6 egg whites (if you want to cut another 15g of fat)
• ½ cup coriander leaves, chopped
• pinch of sea salt and pepper
• 1 cup rice flour
• 1 teaspoon baking powder
• 1 cup finely chopped pineapple
• 4 tablespoons sweet chilli sauce
• a squeeze of lime
• 2 tablespoons chopped mint
