- 8 Lilydale Free Range Chicken Drumsticks
- 2 tbs Extra Virgin Olive Oil
- 1 large red onion, cut in chunks
- 1/4 cup Massamam curry paste
- 400ml can coconut milk
- 400ml chicken stock
- 1 tbs brown sugar
- 3 kaffir lime leaf, whole
- 400g new potato, halved
- 1/2 cup peanuts
- 1 tbs fish sauce
- 1 cup coriander, leaves only
- 1 lime, cut in wedges
