A wonderful dessert for Boxing day that's packed with festive flavours but a little lighter than most Christmas fare. Plus, the ice cream is a great way to use up any leftover Christmas pudding....
Ingredients
- 375g/13oz milk
- 375g/13oz cream
- 150g/5½oz egg yolks
- 110g/4oz sugar
- 25g/1oz glycerine (optional)
- 500g/1lb 2oz crumbled Christmas pudding
- 3 oranges
- 300g/10½oz ground almonds
- 300g/10½oz caster sugar
- 2 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 7 free-range eggs
- 1.5kg/3lb 5oz plums , halved and stoned
- 150g/5½oz butter
- 100g/3½oz sugar
- 1 cinnamon stick
- 1 lemon, juice only
