Ingredients

  • 6 tablespoons butter
  • 3/4 cup King Arthur unbleached all-purpose flour
  • 6 cups milk
  • 1/2 cup cubed Asiago cheese (about 2 ounces)
  • 1/2 cup cubed Italian Fontina cheese (about 2 ounces)
  • 1/2 cup Provolone cheese (about 2 ounces)
  • 1/3 cup grated Parmigiano-Reggiano cheese
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon grated nutmeg
  • CRESPELLE BATTER
  • About 1 3/4 cups King Arthur (tm)unbleached all-purpose flour
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons grated nutmeg
  • 2 large eggs, beaten
  • 1 large egg yolk, beaten
  • 1 1/2 to 13/4 cups milk
  • 1 tablespoon butter, melted
  • 3 tablespoons grated Parmigiano-Reggiano cheese
