• 1/2 teaspoon kosher salt
• 2 large eggs, beaten
• 1 cup (70 g) panko breadcrumbs, plus 2-4 tablespoons if needed
• 3/4 cup (75 g) finely grated Parmesan cheese
• 1/2 cup (55 g) shredded low-moisture mozzarella
• 2 tablespoons finely grated yellow onion
• 2 garlic cloves, minced
• 2 tablespoons chopped fresh parsley
• 1 teaspoon dried oregano
• 1/4 teaspoon black pepper
• 2 tablespoons olive oil, for the pan and tops
• 2 cups (480 ml) marinara sauce, warmed
• 2 tablespoons chopped fresh basil or parsley
