- 1 Red pepper halved, deseeded and diced
- 1/2 Small onion very finely chopped
- 50 grams Aubergine diced
- 1 Plum tomato halved, deseeded and chopped
- 1 Garlic clove chopped
- 1 pinch dried chilli flakes
- 60 grams Ricotta Cheese
- 40 grams Blanched Almonds
- 2 tablespoons Extra virgin olive oil
- 10 grams Basil fresh
