Ingredients

• 1 1/2 cups of shredded Monterey Jack cheese
• 1 red onion, thinly sliced
• 1 1/2 cups of prepared pulled pork
• 8 large flour tortillas
• 1 medium green pepper, finely diced
• 2 tablespoons of brown sugar
• 2 tablespoons of unsalted butter
• 1 tablespoon of balsamic vinegar
